Dry Aging.

 So, you let it rott ... in soft form. The salt in the room is to keep air humidity low and therefore poisoning bacteria limited. The nice term is ... fermentation.

That is not more stakey as, except for Hyenas, technically speaking.

Yes, dry aging meat is considered a form of natural, aerobic maturation that shares characteristics with fermentation, though it is often defined more by enzymatic breakdown and dehydration. 
It transforms meat by developing flavor, increasing tenderness, and causing controlled moisture loss, creating a unique savory profile.
Key Aspects of Dry Aging:Enzymatic Process: Natural enzymes within the meat work to break down muscle tissue and connective tissue, which improves tenderness.
Microbial Activity: Similar to cheese making, beneficial mold species (such as Thamnidium) can grow on the exterior, contributing to flavor and tenderness, though this outer layer is trimmed before consumption.
Dehydration: Controlled airflow reduces moisture, concentrating the natural beef flavors.
Difference from Typical Fermentation:While traditional fermentation (like in salami) focuses on bacteria producing acid to lower pH and preserve meat, dry aging is focused on enzymatic ripening and dehydration, rarely creating the tangy/sour taste associated with lactic acid fermentation. 
However, it is fundamentally a "controlled decay" that relies on microbes and enzymes, similar to fermentation
 
Imagine how Germans, every single one, looks at me ordering every steak English, which is Bloody. 
 
A "fresh-cut bloody steak" is indeed the sensory opposite of a dry-aged steak, even if both are cooked to the same internal temperature.
While both can be served "rare" or "bloody," the physical experience is completely different because of how the meat holds moisture.
 
The Contrast in Experience
The "Bloody" Factor: In a fresh steak, the red liquid (myoglobin mixed with water) is abundant. When you cut into it, this juice pools on your plate. In a dry-aged steak, that water has evaporated, so the center is dark red but dry on the plate.
Flavor Profile: Fresh steaks have a metallic, "iron" taste often described as "bloody" or "clean". Dry-aged steaks lose that metallic note, replacing it with earthy, nutty, or "blue cheese" funk.
Texture: A fresh rare steak is bouncy and "chewy" because the muscle fibers are fully hydrated. A dry-aged rare steak is buttery and "tenderized" by enzymes, often melting in your mouth without the resistance of fresh meat.
